Evoking the atmosphere of Parisian bistros and the spirit of the Belle Époque introduced an evening dedicated to French gastronomic culture; from this setting emerged the choice of cuvées capable of recalling that style, interpreting in a contemporary key the elegance that characterized those places.


Champagne Jacquart Brut Signature B016
Brut Signature B016 is produced predominantly from the 2016 harvest, a complex vintage marked by strong climatic pressures and particularly low yields, yet capable of expressing grapes of high concentration. After an irregular growing cycle, the bright and dry month of August encouraged intense ripening, generating broad aromatic profiles and a remarkable diversity of maturity levels. The 2016 base, characterized by a limited yield of just 9,100 kg/ha, stands out for density and structure, making the use of the réserve perpétuelle unnecessary.
The blend is composed of 40% Chardonnay, 35% Pinot Noir and 25% Meunier, sourced from around 350 base wines selected across 60 crus. The 35% of reserve wines, drawn from the three previous vintages and limited to Chardonnay and Pinot Noir, contributes to strengthening stylistic precision, qualitative continuity and overall balance. Vinification takes place in temperature-controlled stainless steel, with full malolactic fermentation. Aging exceeds six years on the lees; disgorgement was carried out on August 31, 2023, with a dosage of 7 g/l.
Chardonnay comes mainly from the Grand Cru villages of the Côte des Blancs, in particular Vertus, alongside Villers-Marmery on the Montagne de Reims, Mont Berru, Montgueux and Vallée du Landion, areas selected for aromatic finesse and ageing potential. Pinot Noir from the Montagne de Reims provides structure and depth, while Meunier adds a fruity component and immediate expressiveness.
On the nose, the profile opens with notes of ripe white fruit and delicate floral nuances of orange blossom. Citrus accents recalling lemon follow, together with hints of fine pastry and lemon cake. The aromatic framework is completed by touches of dried fruit and honey, light toasty notes, a subtle hint of roasting, delicate spices such as ginger and liquorice, and a buttery nuance.
On the palate it is structured yet elegant, supported by well-integrated freshness and balanced acidity. The effervescence is fine and dynamic, contributing to the gustatory progression. The finish shows a clear mineral and chalky imprint, accompanied by a slight bitter almond note and a citrus persistence that prolongs the closure. Long aging on the lees and measured dosage build a harmonious, balanced profile oriented toward expressive precision.

Champagne Palmer & Co La Réserve Brut
La Réserve Brut by Palmer & Co is built on a 2019 harvest base, integrated with a significant proportion of reserve wines equal to 41%, drawn from the 2018, 2016 and 2015 vintages, a key element in ensuring stylistic continuity, aromatic depth and structural complexity. The blend of the current edition is composed of 51% Chardonnay, 32% Pinot Noir and 17% Meunier. The grapes come from a rigorous selection of the best Champagne terroirs, with a predominance of Premier and Grand Cru sites of the Montagne de Reims, which imprint structure, tension and expressive energy on the cuvée. Aging on the lees lasts 3–4 years; disgorgement was carried out in 2024, with a dosage of 6.5 g/l.
On the nose, the profile stands out for clarity and aromatic precision: notes of ripe citrus and yellow fruit emerge, followed by more evolved nuances of dried fruit and a delicate buttery imprint recalling fine pastry. The overall impression is elegant, progressive and well layered.
On the palate, the wine is fruity, supported by well-integrated freshness that accompanies gustatory development. The balance between acidic tension, substance and roundness is well calibrated, delivering a harmonious, dynamic drink consistent with the Maison’s style.

Champagne Lallier Réflexions R.020
Réflexions R.020 is built predominantly on the 2020 harvest, which represents up to 81% of the blend, completed by 19% of reserve wines from the 2018 and 2019 vintages. The blend is composed of 51% Chardonnay and 49% Pinot Noir. The grapes come from more than fifty crus: Côte des Blancs, Côte de Sézanne and Montgueux for Chardonnay; Vallée de la Marne, Montagne de Reims and Côte des Bar for Pinot Noir.
The harvest, which began at the end of August, favored the preservation of the grapes’ natural freshness and balanced aromatic maturity. The wine is defined by a solid yet harmonious structure, supported by a dynamic and elegant profile. Aging on the lees lasts at least 30 months, followed by a post-disgorgement rest of at least three months. Disgorgement was carried out in April 2023, with a dosage of 7 g/l.
On the nose, delicate floral notes emerge, accompanied by citrus nuances and hints of ripe yellow-fleshed fruit, which give breadth and precision to the aromatic profile.
On the palate, the entry is fresh and silky, with a balanced and progressive mid-palate. The effervescence accompanies the gustatory texture with finesse, while the finish extends into a saline persistence that reinforces tension and final cleanliness.

Champagne Nicolas Feuillatte Grand Cru Millésime 2010 Blanc de Blancs
The Grand Cru Millésime 2010 Blanc de Blancs by Nicolas Feuillatte is produced from a selection of Chardonnay sourced from the Grand Cru villages of Cramant, Chouilly, Avize and Le Mesnil-sur-Oger, in the heart of the Côte des Blancs, areas characterized by chalky soils that confer structural tension and expressive elegance. Alcoholic fermentation takes place in stainless steel, followed by seven years of aging on the lees and a dosage of 6 g/l after disgorgement. The 2010 vintage was marked by strong climatic contrasts, with extreme conditions affecting the growing cycle, generating grapes of uneven maturity yet capable of developing aromatic depth and concentration.
On the nose, the profile opens with notes of white- and yellow-fleshed fruit, with hints of peach, apple and ripe pear, followed by candied citrus accents. Exotic nuances of mango and passion fruit then emerge, accompanied by mentholated and spicy touches that enrich aromatic complexity.
On the palate, the expression is elegant and deep, with a saline and iodine-driven texture supporting gustatory development. The structure of the Chardonnay unfolds with balance, leading toward a long and harmonious finish characterized by citrus persistence.

Champagne Canard-Duchêne Brut Léonie Iconic
Brut Léonie Iconic by Canard-Duchêne was created as a tribute to Léonie Duchêne, co-founder of the Maison, and is conceived in a harmonious and balanced style, focused on enhancing the freshness and expressive purity of Pinot Noir, which dominates the blend. The harvest base is 2019, integrated with a significant proportion of wines from the réserve perpétuelle initiated in 2012 and fed by previous blends, with wines dating back to 2009. The overall proportion of reserve wines is 30%.
The blend is structured around at least 40% Pinot Noir from the Montagne de Reims, 35% Chardonnay and 25% Meunier.
The wine ages for a minimum of three years on the lees. The dosage is approximately 7 g/l.
On the nose, the expression is generous and luminous, with notes of ripe yellow fruit such as peach and apricot, followed by more exotic nuances and delicate spicy touches that enrich the aromatic framework without weighing it down.
On the palate, the entry is broad and enveloping, with a well-defined structure supported by the fruity component. The effervescence accompanies gustatory progression with balance, while sensations recalling candied pineapple, dried flowers and light toasty notes emerge, enriched by subtle spices. The finish is fresh, harmonious and persistent.


An evening that brought together history, taste and contemporary interpretation, restoring the continuity of a style that still today defines the French art de vivre.
